If you have never heard of Zach Green, then perhaps you should, because this Indigenous storytelling chef brings culture to life through his cooking.
Located near the water in Port Hedland, Western Australia, Zach’s Iluka’s Kitchen is described as a concept honouring the ancient histories ‘steeped in our land, water, and country, whilst embracing the new opportunities of tomorrow’s rising sun’.
A sort of fusion of new and old, and a fusion that is quickly earning him a reputation as a leading exponent of Indigenous food.
Using ingredients to honour the ancestors of our land and waters, Zach highlights Indigenous heritage through his dishes, creating immersive cultural experiences.
And it’s not just Iluka’s Kitchen. He manages food and beverage operations at venues like Iluka’s Kitchen, Iluka’s Cafe, The Little Starfish Cafe and Westend Seafood Shack.
He also collaborates with Indigenous communities to support their rights and interests, creating sustainable opportunities.
Zach’s menu reflects tradition, whilst also catering to modern tastes and dietary preferences.

Opening three nights a week, Thursday to Saturday, he offers a three-course set menu, with four choices available per course, featuring mouthwatering options including scallops, mud crab, kangaroo, and a whole range of incredible meals inspired by traditional Indigenous ingredients.
Iluka’s Kitchen is, says Zach, a space for immersive cultural exploration, which aims to promote Indigenous heritage through the language of food.
Each dish blends traditional cooking techniques with contemporary techniques, offering unforgettable dining experiences.
