Sydney Vivid full of Indigenous flavour

March 16, 2025

A four-course journey into native Australian flavours, led by Indigenous Elder and culinary icon Aunty Beryl, is one of the key Indigenous attractions of Sydney’s Vivid 2025 festival.

As an early champion of native ingredients and a mentor, advisor and collaborator to some of the country’s top chefs, Aunty Beryl’s vegetarian menu showcases the depth of knowledge and respect for the land that has guided her decades-long career.

Each evening of the Shared Dream will see a different leading Australian chef on the pans collaborating with Refettorio OzHarvest.

Then enter one of Sydney’s most iconic buildings and embark on a powerful culinary journey that celebrates over 60,000 years of First Nations culture at The Native Food Experience at NSW Parliament House.

This one-night-only, one-of-a-kind dining event invites guests into the heart of Parliament during the buzz of a sitting night, transforming it into a space for connection, reflection and flavour.

Aunty Beryl’s vegetarian menu will be on show at Sydney Vivid 2025.

Parliament of NSW Executive Chef Vanessa Harcourt, renowned for her dedication to native Australian ingredients, will team up with pioneering First Nations chef Dwayne Bannon-Harrison, a proud Yuin-Ngarrigu-Gunai-Yorta Yorta man—to create a delicious, thought-provoking degustation.

Drawing on centuries of traditional knowledge and modern culinary techniques, Vanessa and Dwayne will serve up an unforgettable menu that showcases native Australian produce, some of it sourced directly from Parliament’s very own Native Food Garden.

From rainforest fruits and coastal seafood to game meats and desert botanicals, every dish tells a story of Country, culture, and community.

The Native Food Experience will engage with Australia’s oldest living culture through delicious food, storytelling, live music and performances.

The official countdown to Lights On, First Light launches Vivid Sydney 2025 with a moving celebration of First Nations culture and Calling Country.

Set against the iconic backdrop of the Sydney Opera House and Harbour Bridge at Campbells Cove, this special welcome ceremony will bring to life the rich traditions of the Gadigal people and neighbouring nations through vibrant song, dance, and Language.

“Dream holds another depth for First Nations people,” Vivid Sydney’s First Nations Advisor, Rhoda Roberts said.

“It is a sacred space where the past, present, and future meet—a reflection we call the Dreaming. It’s a timeless act, as ancient as the earth and as universal as life itself.”

NAISDA dancers will open First Light with an energetic, spirit-stirring performance honouring Yolngu culture and the first star of the night, symbolising a creator-spirit.

As the sky deepens to dusk, the powerful voices and movements of the First Nations cast will echo through the Sydney basin, celebrating Country and culture.
